About Naked Friday wines
We founded the winery in 2016 with the return of our family vineyards. Our vineyards were previously managed by a fellow winemaker. With the first vintage of 2017 we started with small quantities of natural wine. After the first small experiments of the organic way of working and aging without filtration and sulfurization of the wines, we decided in 2020 to market our entire vineyard area independently and to manage our vineyards completely organically.
For us, this means that we carry out only the most necessary work in the vineyard to restore the soil life. Of course, our grapes are harvested by hand. We are not friends of maceration, so almost all our white grapes are pressed directly after the harvest to start fermentation in old large wooden barrels. The wines mature until they are bottled the following year (bottling in August). The red grapes and a few isolated white varieties are fermented for 7 days without air contact through a maceration carbonique. The remaining fermentation also takes place after pressing in old large wooden barrels.
Our style is very clear, fruity and acidic due to this method of aging. We try not to harvest the grapes too ripe to preserve the acidity and have low alcohol levels. This is very important to us! Also we try to bottle our wines without sulfur. But if we are not sure if it works without sulfur, we add small amounts of sulfur (10-15 mg/l).
