Ignasi Segui’s family has been working and living in their property in Penedès, Catalonia, since 1405. Ignasi began his Vines Singulars project in 2011 to concentrate on traditional, indigenous varieties, with a huge focus on Xarel-Lo, best known to USAmericans as an ingredient in nicer Cavas. The farm is completely organic and biodynamic, and produces olive oils, honey, vegetables, grains, and eggs, in addition to wine.
The Salinar is a truly extraordinary wine, produced from vines plated in the 80s, hand-harvested, macerated for two days, and then fermented in large chestnut barrels for a minimum of 5 months on the lees. There is further aging in bottle and no sulfur is added at any phase. We love this big, nutty, mysterious salty wine, and we think you might too!
