Mas des Chimères is located in Octon, a small village bordering Lake Salagou, about 50 km from the Mediterranean. The soils in which these grapes are grown are 250 million years old, dating back to when the first vertebrae were coming out of the water.
Everything is done by hand. The soils are particular and very hard to work with because of all the hard volcanic rocks. No large machines can be used in the vineyards. This part of the Languedoc is isolated, not situated within an intensive monoculture like larger cultivated areas. The vines coexist with the rest of nature, and the weather is dry, without any maritime influence. Therefore fungal diseases and mildew are almost nonexistent.
