COS Terre Siciliane Ramí Bianco
COS is an acronym for the surnames of the three founders of the winery, Giambattista Cilia, Giusto Occhipinti (uncle and mentor to Ariana Occhipinti, also a groundbreaking Sicilian winemaker!), and Cirino Strano. They became the youngest winemakers in Italy when they bought Joseph Cilia’s old family winery in 1980. The winery itself dates back to the 1880s during a period in which there was a huge demand for Sicilian wines. Phylloxera had already devastated many of the world’s top wine-growing regions but it had not yet reached the island. All grapes are grown organically and according to biodynamic precepts. Rami is a 50/50 blend of Insolia and Grecanico; it is an “orange” wine, meaning the skins have been left in contact with the juice for an extended period of time. It has great aromas of citrus fruit and hints of minerality with excellent depth of flavor and is well balanced, with good acidity and a pleasant, long finish. Super elegant and fascinating.
